Is it possible for the “supervisor” role to not be able to see some of the sections such as payroll/bank details etc but have access to the other parts of information for their direct reports ?

Normally, the supervisors should not be able to see any attribute saved on a section they have no access rights for. According to your screenshot, the role for supervisors doesn’t have access to the sections shown. If a supervisor is still able to see the attributes saved under that section, it can be that the person is in another role which does have access to it.
If this is not the case, I would suggest you to contact my colleagues for the support team via Find Answers. My colleagues will be able to log in into your account and check the settings of the Access rights together with you.

Within the Access rights you can grant supervisors View, Proposal, or Edit rights for their reports. This includes both direct and indirect reports. You can decide for each section of your account if supervisors should have access to it or not. For example, the first area is the one for employee profiles and the different sections within it. Then the access rights for the salary information can be selected:

These are how the settings are for the supervisor role and yet when I log in I can see these details of their direct reports are visible , just that they cannot edit it.
Is there anything else I am missing ?

Are the supervisors maybe in another employee role in which the salary information is available for them?
Also, the area of your screenshot is within the Employee profiles. Nevertheless, maybe the supervisors have access to the Salary tab in which all the information regarding salaries is saved:
This area is not within the Personal data of the access rights, but on the Salary information:

So I have changed that under the salary tab ,and I still see the details when logged in as a supervisor. What I am aiming to do is hide personal information about the direct reports such as addresses , emergency contact for the supervisor
